Seasonal recipes to enjoy summer vegetables and "Yume no Daichi"
In this seventh installment of "Seasonal Recipes" using "Yume no Daichi" and seasonal ingredients, we introduce a dish using bok choy, a vegetable that comes into season in summer.
Pork belly soaked with flavor and a thick, thick onsen tamago (hot spring egg) are an undeniably perfect match. Crumble the hot spring egg at your own timing and eat it with the meat and rice, and you will be in a state of bliss. The softly fragrant octagonal flavor makes this dish irresistible.

The combination of the melt-in-your-mouth hot-spring egg and pork is a perfect dish.
The green bok choy adds a colorful touch to this dish, and it is sure to increase your appetite.
INGREDIENTS-SERVES 2
- Pork belly (chunk): 300g
- Oil: 1 teaspoon
- Bok choy: 1/2 plant
- purple onion: 1/4
- Sushi vinegar: 3 tablespoons
*Substitute: Mix vinegar and sugar in a 2:1 ratio and add a little salt. - Rice: 2 cups
- Hot-spring eggs: 2
- Thread chili pepper: as needed
- White roasted sesame: as needed
SEASONING A
- Soy sauce: 1 teaspoon
- Shaoxing wine: 1 teaspoon
SEASONING B
- Ginger: 1 clove
- Garlic: 1 clove
- Water: 100ml
- Sake: 3 tablespoons
- Sugar: 3 tablespoons
- Soy sauce: 3 tablespoons
- Five-spice powder: 1/2 teaspoon
PROCEDURE
- Cut bok choy in half, place on a baking dish, cover with plastic wrap, cook in a microwave oven at 600W for 2 minutes, and drain. Cut purple onion into 1cm pieces and soak in sushi vinegar.
- Thinly slice the ginger, leaving the skin on. Peel garlic and crush with the belly of a knife.
- Cut pork into 2 cm wide clapsticks.
- Mix seasoning A and 3) in a bowl.
- Heat salad oil in a pan over medium heat, add 4) and cook until browned.
- Add seasoning B and cook over medium heat until liquid is reduced by half.
- AArrange white rice and 6) in a bowl, hollow the center, and drop a hot-spring egg on top. Garnish with red pepper and white roasted sesame seeds, if desired.
Bok choy is one of the vegetables with competent nutrients. In this article, we will focus on two of them.
- CALCIUM (Ca)
- Calcium is one of the nutrients that are easily deficient. Bok choy is rich in such calcium. In addition to its function of maintaining bone health, calcium is also involved in the neurotransmitter system, which affects the mental health. - IRON
- Bok choy contains a large amount of iron called non-heme iron, which is difficult for the body to absorb. The absorption rate of non-heme iron increases when combined with animal protein. For this reason, the rou rohan recipe introduced here is a perfect match because it uses pork.” The animal protein in the “Dream Earth” and the non-heme iron in the bok choy can increase the body’s absorption rate.
