Goya champloo with deep-fried tofu
Seasonal recipes to enjoy
early summer vegetables and
"Yume no Daichi"
In the fifth installment of "Seasonal Recipes" using "Yume no Daichi" and seasonal ingredients, we introduce a dish using the vegetable "Goya," which is in season from June to August.
The bitterness of Goya is lessened when it is made into champloo, making it more palatable.
By adding pork belly and thick fried tofu, this dish is satisfying and energizing.
INGREDIENTS-SERVES 2
- Goya: 200g
- sugar: a little
- salt: a little
- pork belly: 100g
- thick fried tofu: 1
- carrot: 1/3stalks
- onion: 1/4
- egg: 1
- sesame oil: 2 teaspoon
- salt and pepper: a little
- dried bonito flakes: as needed
MARINADE
- Japanese granulated dashi stock: 1 teaspoon
- Sweet sake: 1 teaspoon
- Sake: 1 teaspoon
- Soy sauce: 2 teaspoon
PROCEDURE
- Remove seeds and seeds from Goya, cut into thin slices, sprinkle with sugar and salt, rub by hand, and let stand for 5 minutes. Run under running water and drain.
- Cut pork belly and deep-fried tofu into bite-size pieces.
- Cut carrots into strips of easy-to-eat size. Cut onion into thin slices.
- Put sesame oil, 1) and 2) in a frying pan and saute over high heat until browned. Season with salt and pepper.
- In the same frying pan, add 1) and 3) and saute over high heat until the onions are transparent.
- Return 4), add seasonings and beaten egg, and fry quickly over high heat.
- Place in a serving bowl and sprinkle with bonito flakes, if desired.
Point
- Drain the bitter melon thoroughly. This will prevent it from becoming watery when frying the ingredients.
Goya is a bitter melon, which is a long, green vegetable characterized by its bumpy skin.This is really famous vegetable for Okinawa prefecture, even though its distinct bitter flavor.
People in Okinawa use Goya in their dishes such as snacks and drinks. Most famous Goya dish in Okinawa is “Goya-champloo”,which consists of tofu, egg, and sliced pork mixed in a stir-fry.
Momordecin, the bitter component of bitter melon, protects the mucous membrane of the stomach. It also stimulates the stomach and intestines to secrete saliva, thereby increasing appetite.
Goya is therefore a recommended food for preventing and combating summer fatigue caused by the heat and humidity of summer.
However, because it is highly stimulating, eating too much of it may cause stomach irritation; it is recommended to consume about half a Goya a day (about 100 g).
Momordecin is water soluble. If you find the bitterness bitter, you can soak it in water after rubbing it with salt or sugar, or boil it under water.
